
It is the season to celebrate and we bring you a variety of recipes to do this with your friends and family. The chefs at Fox in the Field Bangalore bring you a special cocktail to try this festive season.
Double Bramble
Prep time: 10 minutes
Cooking time: 30 minutes for the aquafaba + soaking time
Serves: 1
Ingredients
60 ml bourbon
20 ml mûre puree (made with fresh or frozen raspberries and strawberries)
10 ml citrus
40 ml aquafaba (made with chickpeas, recipe below)
Blackberries for garnishing

Method
For The Aquafaba
- Soak half a cup of chickpeas overnight.
- Wash the chickpeas and add a lot of water to it, the level should be much over the chickpea level.
- Pressure cook the chickpeas for 12-15 minutes, disregarding the number of whistles.
- Allow the pressure to release and when you open the cooker lid, drain the water of the cooked chickpeas in a bowl. This water is the main ingredient and it will be thin and slightly brown in colour.
- Reduce this liquid until it becomes thick and dark brown. The consistency after cooling must be like thick buttermilk. Your aquafaba is ready.
For The Drink
- For the mûre puree, mix in equal parts of raspberry and strawberry and puree it.
- Place the 60 ml Bourbon whiskey, and put it in a shaker.
- Add in the mûre puree to the shaker.
- Add the citrus and aquafaba which is made of white chickpeas and dry shake it for 3 minutes
- Shake the same again with ice and pour into the serving glass.
- Garnish it with berries and serve.
Note: The aquafaba often takes a bit of practice to get the consistency right, but this adds a unique flavour to the cocktail, so try to use it! If pressed for time, you can skip it.
