In this festive month, food plays an important role – bringing us together more than ever around the party table as we celebrate. Add these delicious cocktail samosas from Chef Sabyasachi Gorai to your festive table – they are sure to be a hit. The walnuts in them will add texture, bite and a certain richness to the snacks. 

Cocktail Samosas with Walnuts  

½ cup all-purpose flour
½ cup wheat flour
2 tsp sugar
Salt to taste
½ tbsp oil
Water as required
Oil for deep frying

For the stuffing:
2 tsp oil
½ tsp coriander seeds
1 onion, chopped
½ tbsp ginger-garlic paste
1 green chilli, chopped
¼ cup peas
½ cup chopped walnuts
2 boiled potatoes, chopped
½ tsp red chilli powder
Salt to taste
¼ tsp garam masala
¼ cup chopped coriander leaves
½ tsp amchur/mango powder


  1. To prepare the stuffing, heat the oil in a pan and add the coriander seeds. Add the onion, ginger-garlic paste and green chilli, and sauté well. Add the peas and chopped walnuts. Add the boiled potatoes, followed by all the spices. Mix and cook until well done. Remove to a bowl and set aside to cool.
  2. To prepare the samosas, place the all-purpose flour, wheat flour, sugar, and salt in a bowl. Add the oil and knead well with water.
  3. Take a small portion of the dough and roll it into a thin circular sheet. Using a knife, cut the circle into two halves. Fold the ends to form a perfect triangle shape.
  4. Place some stuffing within the pocket. Seal the ends to prevent the stuffing coming out. 
  5. Repeat with the remaining dough and stuffing. 
  6. Heat the oil in a deep pan and deep-fry the samosas until golden brown.
  7. Serve with tamarind and coriander chutney.
