This recipe from  Narasinh Kamat, Executive Chef at DoubleTree by Hilton Goa Panaji, is easy to make and delicious. 

Badam Pista Fudge Barfi

1 cup badam (almonds)
1 cup pistas (pistachios)
2 tbsp butter
½ cup milk powder
A pinch of salt
1 cup sugar
1 cup water
7 saffron threads
½ tsp cardamom powder
Nuts to garnish (optional)


  1. Using a food processor, coarsely powder the almonds and pista.
  2. Heat the butter in a non-stick pan over a low-medium flame. Add the coarsely-powdered nuts and sauté them for two to three minutes, ensuring that they do not burn.
  3. Add the milk powder and continue sautéing for another two minutes. If your nuts are unsalted, add a pinch of salt at this stage. Remove and set aside.
  4. In another pan on a medium flame, add the sugar, water and saffron threads. Cook until the sugar dissolves completely, then continue to simmer until you get a one-string consistency. To check for a one-string consistency, dip a wooden spoon in the syrup and lift it out. Give it a few seconds to cool. Now, touch the syrup with your forefinger, then touch your forefinger and thumb together and pull apart gently. You should see one string. 
  5. Add the sugar syrup and cardamom powder to the roasted ingredients and continue stirring for five to six minutes on a medium-low flame until the mixture leaves the side of the pan.
  6. Transfer this mixture onto a greased plate or parchment paper. Spread it to the desired thickness. Sprinkle on additional nuts if desired and press in slightly using the back of the ladle.
  7. Allow the barfi to cool down completely before cutting it into the desired shapes.
