As the festive season is around the corner, health will occupy special attention, especially with elevated consumption of sweets. It is during this time that weight watchers and people avoiding have a hard time. For those who face this every festive season, Chef Uma Gupta, Chef at Lakanto India, has her healthier version of Kaju Katli, one of India’s favourite sweets. Now, you can enjoy guilt-free!

Sugar Free Kaju Katli
Prep time: 15 minutes
Cooking time: 30 minutes including cooling time
Serves: 2-3

Ingredients
1 cup cashews
½ cup natural sweetener in powdered form
¼ cup water
1 tsp ghee
¼ tsp cardamom powder
Silver vark for presentation (optional)

Method
  1. Blend cashews in a mixer jar to a fine powder form. Ensure that you pulse it only for a few seconds at a time, so that the cashews do not release their oil. Sieve the powder to make sure there are no lumps.
  2. Place the water and the natural sweetener in a pan and bring it to boil. Let it boil for a few minutes (about five to six) until you get a one string consistency syrup. It should not be cooked for long, otherwise the katli will not turn out soft.
  3. Add in the powdered cashews and mix well on a very low flame. Add the cardamom powder and the ghee. Continue to stir for five minutes, until the mixture turns into a smooth paste.
  4. Turn off the flame and continue to stir and soon the mixture will thicken and turn into a dough.
  5. Transfer the dough to a sheet of greased butter paper and fold and knead a few times to turn it into a soft dough.
  6. Roll the dough out very lightly and cut into diamond shapes.
  7. Now softly apply the silver vark and your Kaju Katli is ready!
  8. It will stay for about a week to 10 days.
